Enjoyed TWO beach days
The Stigdons spent the week at an Airbnb in Cabarete for their 40th wedding anniversary and invited me to spend the day with them Thursday (the DR's observation of Corpus Christi meant the regional office was closed). How could I say no when Dana tempted me with this picture from their balcony? A walk on the beach, Greek salad, cards, pool time...ahhhhhhhhh.
Two days later, the "DR Cool [aka 40 and under] Crew" hightailed it to Costambar.
Squeezed in as much patio time as possible
Eating breakfast, hosting fellow missionaries and seminary students for dinner, reading (I finished The Hobbit at the beach and have now moved on to The Fellowship of the Ring)...today on pro-tips from Erin, just search "Patio Vibes" on Spotify for the perfect soundtrack.
Supported Spanish language-learners
New missionaries + 2 summer Expanding the Spanish Footprint candidates from Concordia Seminary, St. Louis each gave a 15 minute presentation on a country of their choosing. It was an enormous undertaking on par with a college-level Spanish class assignment, so I was more than happy to go cheer them on...and ask the occasional simple question to make them speak off the cuff a little!
It was my first time baking with a gluten-free flour blend. Even after halving the buttercream recipe, the end result was DENSE and RICH with 3+ sticks of butter and more than a pound of frozen blueberries. I started by making a blueberry reduction that figured into the batter and the icing; the extra became a convenient addition to the filling between layers. Birthday girl Cheryl approved.
Add in a smattering of blogging, upcoming volunteer team prep, regional conference logistics, and the like, and I stayed busy. Because I know you're wondering...I leave again (Belize) July 3.
